Bhakri: A Multigrain Gluten Free Marathi Flat Bread Recipe

Bhakri is a delightful flatbread that hails from India. It’s made from a combination of flours, resulting in varied textures and thickness. Whether you’re a fan of Indian breads or just looking for a quick and easy recipe, bhakri fits the bill. Also known as jowar roti, jowar bhakri, or Maharashtrian bhakri, this bread is popular across India. Let’s dive into making this wholesome and healthy flatbread!

Ingredients:

  • 1 cup jowar flour (sorghum or millets) – Alternatively you can use rice flour or Nachni aka Red millet for this bread. Some also use a mix of these flours for more nutritious value (these flours are available internationally in Indian supermarkets or major supermarket chains).
  • 2 tablespoons ghee
  • Salt, to taste
  • 1-2 cups boiling hot water

Instructions:

  1. Prepare the Dough:
    • In a wide bowl, combine (dry mix) the jowar flour, ghee and salt.
    • Gradually add boiling water and mix with spoon until clumps form, then knead into a firm malleable dough (add a little water if it feels too dry).
    • Cover the dough and set it aside for 15 minutes.
  2. Roll and Cook the Bhakri:
    • Preheat an iron skillet on medium heat.
    • Divide the dough into 3-4 equal portions.
    • Roll out each portion into a 4-5 inch diameter circle (should be pressed thin around 1/8 of an inch like a tortilla). If you want you can use a tortilla press for better shape and thickness.
    • Place the rolled dough on the heated skillet.
    • Cook each bhakri on both sides until brown, applying light pressure with a wooden press to ensure even cooking.
    • Once cooked apply ghee with a brush to both sides of the bhakri for flavour and maintaining softness.
  3. Serving Ideas:
    • Enjoy plain with raw onions and thecha.
    • Pair with yogurt and Creamy Kofta Curry, Palak Paneer, Chicken Vindaloo or Mutton Kheema for a wholesome meal. Or make a wrap or burrito its quite versatile.
    • Its gluten free so that’s a plus for some people with health concerns.
    • Bhakri also travels well, making it ideal for long-distance journeys.
