Day 41 of the Cut

Last night I slept a full 8 hours! I was actually surprised because I did not know my body was so exhausted. I almost never sleep that long. I think fasting at night helped my body relax a little more because that is the one change I made yesterday. This morning I went to the gym after a three day break. I trained legs and I tried to cover as many exercises as I could but I set a time limit on myself because I have a tendency to overdo it. I managed to do a phenomenal workout in the time frame I set. I think I can do it faster but I won’t rush it. I am trying something new with all the workouts this week to see if I can cut down the times for all of them.

When I came home I was greeted by crispy home made Fried Chicken! And guess what’s the best part? My mom fried it an ounce of oil. It wasn’t deep fried or air-fried! It was a healthy alternative and tasted better than Popeye’s if I may say so. The chicken was marinated in garlic-ginger paste, green chillies paste, salt and pepper, turmeric and red chilli powder. It was then dredged in egg wash(mixed with salt and pepper) and potato starch (make sure to double dredge for extra crispy outer layer) before being pan fried to a crisp. She used boneless chicken thighs and it was fried at medium low for 10 minutes on each side until golden brown.

As a side dish my mom made Suran (Elephant Foot Yam) which is a yam that is grown here locally. Its a great alternative to potato or sweet potato and is usually eaten to keep the body cool. It is also more fibrous than either of the potatoes and has its own unique earthy taste. The other benefits of it are that it has a lot of potassium and is great for blood sugar control and heart health in general. It needs to be cooked with some sort of acid like lime juice or tamarind because it has some properties which can cause itching of the throat or the skin. Partly why I used to avoid eating it before but now that I know better I have come to enjoy the taste of it. By the time the meal was done I was smiling from ear to ear like the Cheshire cat.
