Marathi Faral Snacks Series: Chirote- A Crispy Layered Sweet Puri

Get ready to indulge in the delightful world of Chirote! These flaky, crispy layered sweet puris are a traditional Maharashtrian treat, especially popular during Diwali. Made with simple pantry ingredients, Chirote are fried to perfection and then dipped in aromatic sugar syrup. In this recipe, I’ll also share an air-fryer option for a healthier twist.

Ingredients (Makes 4 Servings)

  • 1 cup all-purpose flour (maida)
  • 2 tablespoons ghee
  • Water (for kneading the dough)
  • ¾ cup sugar
  • ⅓ cup water
  • ½ teaspoon cardamom powder (elaichi)
  • 1 tablespoon rice flour
  • ½ tablespoon all-purpose flour (maida)
  • Whole almonds (badam), chopped (as required)
  • Pistachios, chopped (as required)
  • Cashew nuts, chopped (as required)

Method

  1. Prepare the Dough:
    • Mix all-purpose flour, ghee, and knead into a stiff dough, adding water gradually. The dough should be firm and smooth, similar to puri dough. Cover and set aside for 15-20 minutes.
  2. Make the Sugar Syrup:
    • Boil sugar and water in a pan. Reduce the flame and check for one-string consistency. Add cardamom powder and set aside.
  3. Prepare the Ghee-Flour Mixture:
    • Mix ghee, rice flour, and all-purpose flour. Keep aside.
  4. Roll Out the Chirote:
    • Divide the dough into 6 equal parts and roll each ball into a big round (similar to a large-sized roti).
    • Apply the ghee-flour mixture evenly on one roti. Place another roti on top and repeat the process.
    • Stack the third roti and apply the ghee-flour mixture.
    • Roll them up into a log and cut small pieces from the roll.
  5. Fry the Chirote:
    • Heat oil in a pan. Fry the Chirote until they turn golden brown and crispy. Drain excess oil.
  6. Dip in Sugar Syrup:
    • While the Chirote are still warm, dip them in the prepared sugar syrup. Ensure they are well-coated.
    • Garnish with chopped almonds, pistachios, and cashew nuts.
