Thecha Recipe: A Spicy Maharashtrian Condiment

Thecha is a fiery Maharashtrian condiment that packs a punch! Made with fresh green chilies, garlic and salt, it’s coarsely pounded to create a robust chutney. Whether you’re serving it with bhakri (millet flatbread- you can find the recipe here) or as a side dish, thecha adds a burst of flavor to your meals. Let’s dive into this traditional recipe and get ready to spice things up!

Ingredients

  • 15 green chilies, chopped
  • 10 cloves of garlic, chopped
  • 1 teaspoon ginger paste
  • Salt, to taste

Instructions

  1. Wash the green chilies and pat them dry. Remove the stems.
  2. Peel the garlic cloves.
  3. In a mixer jar, combine the green chilies, garlic, ginger and salt.
  4. Blend into a coarse paste. Adjust the spiciness by choosing milder or hotter chilies (smaller the chilli spicier it is). Alternatively you may use a mortar and pestle to crush the ingredients together.
  5. Optional: Add toasted sesame seeds or chopped cilantro for extra flavor.
  6. Serve your thecha with bhakri, roti, or any meal that needs a kick!

Serving Ideas

  • Pair it with hot jowar bhakri and raw onions for an authentic experience.
  • Use it as a dip for your favorite snacks.
  • Mix it into rice or dal for an extra zing.

Conclusion

Don’t be afraid of the heat! Thecha is a bold, vibrant condiment that elevates your meals. Try it once, and you’ll be hooked. So go ahead, unleash your inner spice lover, and give this Maharashtrian delight a shot!
