Ingredients (for approximately 20 chaklis)
- 2 cups Bhajni flour
- 2 ½ tablespoons oil (lukewarm or hot, be careful when handling)
- 2 cups boiling water (add slowly as required, must be thick but pliable dough)
- ¼ teaspoon turmeric powder
- ½ teaspoon carom seeds (ajwain)
- ½ teaspoon cumin seeds
- 1 teaspoon red chili powder (adjust to taste)
- 1 generous pinch of asafoetida (hing, optional)
- 1 tablespoon sesame seeds (white or black)
- Salt (as required)
- Oil (for deep frying—any neutral high smoke-point oil)
Method

- Mix & Knead: In a bowl, combine Bhajni flour, oil, turmeric, carom seeds, cumin seeds, red chili powder, asafoetida, sesame seeds, and salt. Gradually add water to form a firm dough.

- Shape & Fry: Heat oil for frying. Attach the chakli disc(star shape) to the press. Take a portion of the dough, load it into the press, and spiral out chaklis into a plate as shown above. Once you have enough chaklis ready slowly drop them into hot oil. Fry until golden brown.
