The Delight of Homemade Chicken Tikka Masala

This recipe serves 4 people. Each serving contains approximately:

Ingredients

  • Chicken: 500g boneless chicken thighs, cut into pieces. For vegetarians, paneer or tofu can be a great alternative.
  • Yogurt: 1 cup. You can use Greek yogurt for a thicker marinade.
  • Spices: 2 tsp each of turmeric, cumin, coriander, chilly powder and garam masala.
  • Tomato Puree: 1 cup. Freshly pureed tomatoes can also be used.
  • Onions: 2 medium-sized, finely chopped.
  • Garlic and Ginger: 1 tbsp each, minced.
  • Cashews: 5-8 pieces
  • Oil: 2 tbsp. Olive, Sunflower, Mustard or Peanut oil can be used.
  • Salt: To taste.

Preparation Steps

  1. Marinate the Chicken: Mix the chicken pieces with yogurt, half of the spices, salt, and let it marinate for at least 2 hours (best left overnight).
  2. Cook the Chicken: Heat 1 tbsp oil in a pan over medium low heat. Add the chicken pieces and cook until they’re done. This should take about 10-15 minutes. To check for doneness internal temperature should be around 74 C or 165 F or cut and taste to check if pieces are white on the inside and tender. Remove the chicken in a bowl and set it aside.
  3. Prepare the Sauce: In the same pan, add another tbsp of oil. Add onions, garlic, cashews and ginger, and sauté until the onions are golden brown. Add the remaining spices and tomato puree. Cook until the sauce thickens. If you wish to have a smooth sauce blend the mix in a blender. Adjust salt if necessary.

Instructions

  1. Add the cooked chicken to the sauce and mix well. Let it simmer for another 10 minutes.
  2. Garnish with fresh coriander leaves and serve hot with rice or naan.
