Marathi Thali Series: Mixed Vegetable Gravy Recipe

  2. Sauté the Spices: Heat oil in a large pan. Add mustard seeds and let them splutter. Add cumin seeds, asafoetida, and turmeric powder.
  3. Cook the Onions and Tomatoes: Add chopped onions and sauté until golden brown. Add ginger-garlic paste and cook for a minute. Add tomatoes and cook until they soften.
  4. Add the Veggies: Toss in the mixed vegetables and sauté for a few minutes.
  5. Spice it Up: Add goda masala, red chili powder, and salt. Mix well.
  6. Add Coconut and Water: Add grated coconut and mix. Pour in 2 cups of water and bring to a boil.
  7. Simmer: Reduce the heat, cover the pan, and let it simmer for about 15-20 minutes or until the vegetables are cooked.
  8. Garnish and Serve: Garnish with fresh coriander leaves. Serve hot with chapati, rice, or bhakri.
