Puran Poli: Festive food for festive vibes

Puran Poli is a traditional Maharashtrian sweet flatbread, often made during festivals like Holi, Diwali, and Ganesh Chaturthi. This delicious treat is filled with a sweet lentil mixture and is enjoyed by people of all ages.

Ingredients:

For the Dough:

  • 2 cups whole wheat flour (gehun ka atta)
  • 1 cup all-purpose flour (maida)
  • Water (as needed)
  • A pinch of salt
  • 2 tablespoons oil or ghee

For the Filling (Puran):

  • 1 cup chana dal (split Bengal gram)
  • 1 cup jaggery (grated)
  • 1/2 teaspoon cardamom powder
  • 1/4 teaspoon nutmeg powder
  • A pinch of saffron (optional)
  • 2 tablespoons ghee

Instructions:

  1. Prepare the Dough:
    • In a bowl, mix whole wheat flour, all-purpose flour, and a pinch of salt.
    • Add water gradually and knead into a soft dough.
    • Add oil or ghee and knead again until smooth.
    • Cover the dough and let it rest for at least 30 minutes.
  2. Prepare the Filling (Puran):
    • Rinse the chana dal thoroughly and cook it in a pressure cooker with enough water until soft (about 4-5 whistles).
    • Drain the excess water and mash the dal to a smooth consistency.
    • In a pan, add the mashed dal and grated jaggery. Cook on medium heat until the mixture thickens and leaves the sides of the pan.
    • Add cardamom powder, nutmeg powder, and saffron. Mix well and let it cool.
  3. Assemble the Puran Poli:
    • Divide the dough into equal-sized balls.
    • Roll out each ball into a small disc.
    • Place a spoonful of the puran (filling) in the center of the disc.
    • Bring the edges together to seal the filling and flatten it gently.
    • Roll out the stuffed dough ball into a thin, round poli.
  4. Cook the Puran Poli:
    • Heat a tawa (griddle) on medium heat.
    • Place the rolled puran poli on the tawa and cook until golden brown spots appear on both sides.
    • Apply ghee on both sides while cooking.
    • Repeat with the remaining dough and filling.
  5. Serve:
    • Serve the puran poli warm with a dollop of ghee and some milk on the side.

      Its a form of lentil called chana dal aka split chickpeas mixed with jaggery or raw unrefined sugar and cardamom. Its quite popular here in our state of Maharashtra, India. Its a stuffed flatbread and tastes great with milk and butter.
