Sabudana Khichdi is a delightful Indian dish made with tapioca pearls (also known as sago), whole spices, roasted peanuts, and fresh curry leaves. It’s commonly prepared during fasting. This vegan and gluten-free dish is simple yet flavorful.
Ingredients
- Sabudana (Tapioca) – 1 Cup
- Roasted Groundnuts -1 Cup
- Green Chillies – 2
- Jeera (Cumin Seeds) – ½ Spoon
- Ghee (Clarified Butter) – 2 Spoons
- Salt as needed
Method
- First of all clean, select and wash the Sabudana (Tapioca) very well. Soak it with one cup of water for at least two hours.
- Grind the roasted groundnuts in a mixer and make a fine powder. [Peeling the groundnuts is optional.]
- After that put the gas on high flame. Put a dry pot with thick bottom on the flame.
- Once the pot becomes hot lower the flame. Check the Sabudana if it has soaked the water completely and there is no extra water remaining. Mix the groundnut powder and salt in the Sabudana.
- After that put the ghee in the pot. Let it heat up then put the jeera to fry. Soon after put the mixture of Sabudana and groundnut in it and mix well. Cover the pot and leave it for five minutes to cook on low medium flame.
- It is crucial that gas is on low flame. After five minutes remove the cover from pot and check the Khichadi whether it’s cooked. Check if the Sabudana has become translucent. Once it is ready, turn off the flame and leave it covered for five minutes. After that it will be ready to serve.
Tips
- You can grind green chillies and coriander leaves together and put this paste in the khichadi so that it will get a greenish hue and a fresh flavour.
- While soaking Sabudana take care when pouring water in it. If the water is too less the Sabudana will become too dry and if there is too much water it will become too sticky and tasteless.
- Instead of water you can soak the Sabudana in Buttermilk, this will make it a little sour and the taste will improve.
- Before soaking the Sabudana roast it in a pan, then wash it, remove all the water properly and soak it in the milk. The Khichadi will get the rich taste.
