Ingredients (Serves 8)

  • 1 cup semolina (rava)
  • ¾ cup sugar (adjust to taste)
  • ¼ cup desiccated coconut (optional)

  • 1 teaspoon cardamom powder
  • 10 raisins
  • 10 broken cashews

Method

  • Roast the Semolina:
    • Dry roast 1 cup of semolina along with ¼ cup desiccated coconut until it turns light golden and aromatic. Keep it aside to cool.
  • Prepare Sugar Powder:
    • Grind ¾ cup sugar along with cardamom powder to a fine powder. Let it rest for a few minutes.
  • Combine Semolina and Sugar:
    • Add the roasted semolina and coconut to the sugar powder. Grind again until slightly coarse (you should feel a gentle crunch).
  • Add Ghee and Mix:
    • Warm up ¼ cup ghee. It should be warm to touch but not hot.
    • Mix the ghee into the semolina-sugar mixture until well combined.
  • Shape the Laddus:
    • Grease your palms with ghee.
    • Take a small portion of the mixture and shape it into round laddus.
    • Garnish each laddu with a raisin and a broken cashew.
