Delicious Seviyan Kheer | Indian Pudding

Alternatives

  • You can use rice vermicelli or all-purpose flour vermicelli if whole wheat vermicelli is not available.
  • You can also use coconut milk for a vegan version.

Instructions

  1. Heat the ghee in a heavy pan.
  2. Add the vermicelli to the pan and roast it until it turns golden brown.
  3. In a separate pot, bring the milk to a boil.
  4. Add the roasted vermicelli to the boiling milk.
  5. Let it simmer until the vermicelli is cooked and the milk starts to thicken.
  6. In a bowl add a tablespoon of hot boiling water and ad Saffron strands to it so it can start blooming. Crush it using the back of a spoon. Let it sit for a minute.
  7. Add the sugar, cardamom powder, pinch of salt and saffron water to the pot and stir well. Then add the cream and stir well.
  8. Cook for a few more minutes until everything is well combined.
  9. Garnish with your choice of dry fruits before serving.

Seviyan Kheer is a versatile dessert that can be served either hot or cold, depending on your preference. It’s a perfect after-dinner treat, but it can also be enjoyed as a sweet accompaniment to a hearty lunch. It’s even served with puri during meals.
