Ingredients:

  • 1½ cups cooked rice (any non-sticky rice)
  • Juice of 1 lemon
  • 2 tablespoons peanuts (fried)
  • 2 tablespoons coriander leaves (chopped)
  • mustard seeds
  • half teaspoon urad dal (black gram)
  • 2 dried red chilies
  • 6-8 curry leaves
  • 2 green chilies chopped
  • 1 small ginger crushed
  • Turmeric (for color)

Instructions:

  1. Cook the Rice:
    • Wash and soak 1½ cups of rice for 15 minutes (optional).
    • Cook the rice using your preferred method (pot or pressure cooker).
    • Fluff it up and let it cool.
  2. Tempering:
    • Heat oil in a pan.
    • Add mustard seeds, urad dal (black gram), dried red chilies, and curry leaves.
    • Once they splutter, add green chilies and ginger.
    • Mix in the cooked rice and lemon juice.
    • Season with salt and turmeric.
  3. Gently Stir:
    • Combine everything gently, ensuring the rice absorbs the flavors.
    • Add fried peanuts and chopped coriander.
  4. Serve with Yoghurt or Indian pickles.
