If humidity has ever peaked to the max in this world it would be here in my city this morning. There was a power outage and the heat went up and the humidity went up too! A lot of the members at the gym gave up before they even started working out. I had goals to accomplish so I stayed. After a grueling three hours and sweating buckets, I finally finished my leg workout. It took three hours because I was out of breath a lot of times and I had to wait to catch up on it. The windows were open but it was so hot! Some of the guys at the gym were telling me to not work too hard but I was so determined. I did my first ever hack squat PR at 50kgs today. I am aiming to go for 100kgs by the end of the month. It feels easier on a hack squat machine because there are several support points and the muscles are targeted well. I want to build massive legs so this machine came in clutch. I found the abductor machine difficult to use mainly to get in and out of it lol. But I got the work done.

Came home and lunch was Eggs, Boiled Potatoes, Greek Yoghurt and Sautéed Cabbage. I made a special dessert for today. Its low sugar and an invention my mom and I developed. Its got three layers the base layer is Sweet Potato mixed with sweetened condensed milk, the second layer is Mango Pulp and the third layer is tempered Dark Chocolate. It has been a while since I tempered chocolate so I found it a little challenging to do it again. I used 99% dark chocolate for this recipe. Its really bitter and needs some sweetened condensed milk and regular milk to ease up on the bitterness. The chocolate becomes soft like mousse after cooling down when you add condensed milk to it during the tempering stage. The end result was chocolatey goodness!

Chocolate is not too difficult to work with but its not a beginner friendly recipe. If you think tempering chocolate is too much work then simply add a layer of crushed chocolate or chocolate chips on top of the pulp. I think the best recipes are the simplest ones and this combination was better than any mousse or pastry I have ever had. The best part is that you can add the pulp of any fruit you like and you get to control the amount of sugar you add to the recipe. This dessert is best served chilled. We haven’t decided on a name for the recipe yet maybe you can help. Went for a walk in the evening. Day 34 was a success!
