Skordalia: Greek Garlic and Potato Dip

Ingredients

  • Potatoes: I recommend using waxy potatoes (about 4-5 medium sized), but rough potatoes work well too.
  • Garlic: The star ingredient! Use around 6 cloves for that irresistible garlicky flavor.
  • Nuts: About 3 ounces of blanched almonds or shelled walnuts.
  • Lemon Juice: Adds a zesty punch.
  • Extra Virgin Olive Oil: Generous amounts to create a smooth, fluffy dip.
  • Salt: To taste.

Instructions

  1. Boil the Potatoes: In a medium saucepan, bring salted water to a boil. Cook the make sure to skin the potatoes until fork-tender. Drain and mash them in a medium bowl.
  2. Blend the Almond Mixture: In a blender, combine olive oil, blanched almonds (or walnuts), water, garlic, and lemon juice. Puree until smooth and emulsified.
  3. Combine Everything: Pour the almond mixture over the mashed potatoes and stir until well incorporated. Season with salt.
  4. Serve: Skordalia can be served chilled as mezze or at room temperature as a side. Letting it chill intensifies the flavors.

Alternatives

  • Garlic: Adjust the amount of garlic to your liking. Roasted garlic can also be used for a milder flavor.
  • Nuts: Feel free to experiment with walnuts instead of almonds.
  • Potato Base: Traditional Skordalia uses day-old bread, but we’ve opted for mashed potatoes here. You may also use Sweet Potatoes.
