Hearty and Creamy Palak Paneer Recipe | Vegetarian Delight

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 6 cloves garlic, crushed

  • 200-500g blanched and pureed spinach
  • 3 tomatoes blanched, skinned and pureed
  • 1 cup water when needed
  • 2 tablespoons grated fresh ginger
  • 2 cups fresh cubed paneer
  • 1/2 cup fresh heavy cream
  • 1 ounces butter

Alternatives

  • Substitute tofu for paneer to make it vegan.

Instructions

  1. Heat 1 tablespoon olive oil in a heavy bottom pot over medium to low heat. Add cumin to pop and before the cumin burns add the finely onion in hot oil and cook until slightly brown and tender, about 5-10 minutes.
  2. Add garlic, coriander, turmeric, chilli powder, garam masala. Cook and stir until fragrant and oil starts separating from spices, about 3-5 minutes. Lower heat at this stage to avoid burning spices.
  3. Mix spinach puree, tomato puree and grated ginger into the mixture. Simmer for 20 minutes. Consistency must be thick but not dry.
  4. Heat olive oil in another skillet over medium heat. Fry paneer in hot oil until lightly browned, 2-3 minutes.
  5. Add fried paneer cubes to spinach mix and cook until heated through, 3 to 5 minutes. Add cream and butter to the mix and simmer for 5 minutes. Mix well.
  6. Serve with naan or rice.
